The Colorado Cannery Project will Resume in September 2010.
The name of the project implies only a canning facility, however we are very interested into looking at all ways of preserving food including canning, fermenting, and drying food.
The Colorado Cannery Project (CCP) is a project that will conduct an online survey, conduct community meetings in select Colorado Communities, develop a business model, and complete a feasibility study for the construction and operation of a scalable community cannery located in Colorado.
Goals of the CCP include:
1.) Identify Interested Communities
2.) Identify Potential Crops and Quantities
3.) Determine a Business Model
4.) Select an Optimum Location
5.) Develop Site and Equipment Costs
6.) Create Financial Projections
7.) Develop a Business Plan
The results of the project will be presented to producers and the community in 2011.
We will evaluate reasonable possible functions of a canning facility that include:
1.) A Common Kitchen Area
2.) A Larger Scale Food Production Area
3.) An Education/Product Development Area
4.) Drop Off and Distribution Area
5.) Retail Store
